Reports to: Head Cook / Support Services Coordinator for Catering Services

Directorate: Performance and Service Improvement

Location: South West Acute Hospital and Enniskillen and Fermanagh Community Areas

Contract and Hours: Permanent/Temporary/Bank and Part-time/full-time

 

Role Purpose

Applicants will be expected to vary hours of duty on occasions to meet requirements of the department, i.e. sickness, holidays and weekends. Will be required to assist the Head Cook in the following duties and cover the department in his/her absence, during off duty and holidays etc.

Support services staff within catering will also be required to work to in accordance to the Trust Food Safety management systems and HACCP management and working instructions. The position will entail constant pursuit of quality standards, with flair and commitment to the provision of preparation, delivery and service of food to patients, clients, staff and visitors.

 

Main Duties & Responsibilities

 

  • The preparation, cooking, dispatch and service of all dishes in line with menus & dietary requirements eg freshly prepared textured meals and all in accordance with Food Safety Management System.
  • Daily requisitioning of provisions used in their particular section.
  • Ensure the correct use of Catering IT systems such as Saffron/Kalcius to accurately record data.
  • In line with Food Safety Management controls daily checking of stock, cooked foods etc. and temperature of refrigerators and deep freeze. Ensure stock rotation 'Use by' or 'Best Before' dates are adhered to.
  • Ensure the worktops, utensils and items of equipment are cleaned regularly & Sanitised.
  • Reporting any defective equipment to Head Cook or line manager.
  • Reporting of accidents or incidents to Head Cook or Line manager.
  • The instruction of Support Services Assistant and trainees on placement, in matters of Hygiene, Portion Control, Method and the economic use of materials in the department.
  • Recording & Reporting of staff absence to Head Cook or line manager.
  • Assist in the serving of food to both staff and patients.
